Growing up we lived on a farm where my parents grew lots of fresh fruit and vegetables. I was extremely lucky to have had this childhood, yet I didn't quite appreciate it like I do today. Following in the footsteps of my dad I have come to love gardening and growing all my own produce. My place is not quite my parents farm where fruit and veg such as peaches, figs, grapes, pears, apples and so much more are growing in abundance.
This season my dad had so many apples that we don't know what to do with them all, many are stored in boxes on top of each other in the outside fridge or we give to family and friends to enjoy. The recipe I'm going to share with you is turning into a real classic, every time I make it for visitors they can't believe it's GLUTEN FREE! This apple crumble is so easy to make I hope it becomes a real hit in your household.
Serves 6-8 Prep time 20 minutes Cook time 1 hour
Dairy free, gluten free, vegetarian and vegan friendly
Apple mixture
- 6-8 medium apples (your choice)
- 1/4 cup sultanas
- 2 tbsp goji berries
- 1/2 cup water
- 1/2 tsp vanilla powder
- 1/2 tsp ground ceylon cinnamon
- 1/2 tsp nutmeg
- 1 tsp maple syrup
Crumble mixture
- 3/4 cup rolled oats
- 1/2 cup shredded coconut
- 1/2 cup macadamia nuts
- 1/2 tsp ground ceylon cinnamon
- 1/2 tsp vanilla powder
- 2 tbsp maple syrup
- 3-4 tbsp macadamia oil
Method
- Wash and core the apple, then slice them into smaller pieces and place in a large pot
- Add the apple mixture ingredients; water, sultanas, goji berries, cinnamon, vanilla, nutmeg and maple syrup to the pot and stir well. Cook on a medium heat and stir occasionally until the apple are nice and soft, around 20 minutes.
- Preheat oven at 150 degrees.
- In a food processor add the macadamia nuts and process into smaller pieces, then add oats, cinnamon, vanilla, maple syrup and macadamia oil and process again for another 10 seconds or until mixed well and desired crumble consistency (chunky or medium).
- Pour apple mixture into a casserole dish and cover with the crumble and press down so that the crumble is more compact and sticking together well.
- Place in oven and cook for 35 minutes or until the crumble is golden in colour.
Enjoy your tasty apple crumble with a nice big dollop of coconut yoghurt.
