These burgers are so yum. I got this recipe from a friend and it was an absolute hit!

Ingredients:
- 2 1/2 cups grated fresh beetroot
- 1 onion
- 3-4 cloves of garlic
- 2 tbsp extra virgin olive oil
- 2 free range eggs
- 1 1/2 cups rolled oats
- 200g feta cheese
- 1/3 cup chopped parsley
- 1-2 tbsp psyllium husk
- Salt & pepper to taste
- 1 tbsp extra virgin coconut oil

Directions:
- Grate the beetroot, onion and crush the garlic and place in a bowl.
- In a separate bowl lightly beat the eggs.
- Add beaten eggs, rolled oats, parsley and olive oil to the grated beets, onion and garlic and mix and season.
- Next crumble feta cheese into the mix making it as chunky or crumbled as you desire.
- Now add the psyllium husk, mix well and let mixture sit in the fridge for 20-30 minutes so that the oats and Psyllium can soak up some mixture to help it keep its shape.
- Roll into burgers making up to 4-8 burgers depending on the size you like.
- Place flattened burgers into a hot frying pan with the coconut oil and cook.
I placed my burger in turkish bread that I had heated in the oven. I chose to top the burger with home made tzatziki, crushed avocado, lettuce, tomato, fried onion and alfalfa. What a combination!
