Beetroot Burgers...

These burgers are so yum. I got this recipe from a friend and it was an absolute hit!

    Directions:

  • Grate the beetroot, onion and crush the garlic and place in a bowl.
  • In a separate bowl lightly beat the eggs.
  • Add beaten eggs, rolled oats, parsley and olive oil to the grated beets, onion and garlic and mix and season.
  • Next crumble feta cheese into the mix making it as chunky or crumbled as you desire.
  • Now add the psyllium husk, mix well and let mixture sit in the fridge for 20-30 minutes so that the oats and Psyllium can soak up some mixture to help it keep its shape.
  • Roll into burgers making up to 4-8 burgers depending on the size you like.
  • Place flattened burgers into a hot frying pan with the coconut oil and cook.

I placed my burger in turkish bread that I had heated in the oven. I chose to top the burger with home made tzatziki, crushed avocado, lettuce, tomato, fried onion and alfalfa. What a combination!
