Raw caramel slice

I have been a massive fan of caramel slice since I was a kid and now I have found the perfect recipe that tastes absolutely amazing but with out all those highly processed sugars……

    Caramel:

  • 1 cup dried pitted dates
  • 1/2 cup coconut oil
  • 1 1/2 tbsp unhulled tahini
  • 1/3 cup maple syrup
  • 1 cup raw cashews
  • 1/4 cup water
    Directions:

  • Pulse the base ingredients in a food processor until it makes crumbs
  • Press down crumbs into a tray lined with grease proof paper and put in freeze
  • Blend caramel ingredients in the food processor until thick and creamy
  • Pour caramel mixture into tray on top of crumb base and put in freezer to set
  • Mix melted cacao butter with the rest of the chocolate ingredients until smooth
  • Pour chocolate on top of caramel mixture and then leave in fridge to set… Enjoy xo
