These pancakes are really yummy and they will keep you full for hours!! Banana flour is naturally gluten free, paleo, FODMAP friendly and high in resistant starch.

Ingredients:
- 1 cup banana flour
- 3 eggs
- 1 tsp gluten free baking powder
- 3 tbsp maple syrup
- 1 tsp pure vanilla extract
- 1/2 cup coconut or almond milk
- 2 tbsp lemon juice
- Pinch of salt
- Coconut oil

Method:
- Combine all the ingredients until smooth, except the coconut oil.
- Heat the coconut oil in the pan and pour desired amount of mixture to form pancake.
- Flip pancake when nice and golden underneath.
- Enjoy with your favourite toppings, I personally love chopped banana and maple syrup.
