- 1 cup of millet cooked and cooled
- 1 red onion finely chopped
- 3-4 spring onions finely chopped
- 1/2 bunch parsley finely chopped
- 1/2 bunch mint finely chopped
- 1 tomato finely chopped (optional)
- 2-3 tablespoons olive oil
- 1-2 lemons juiced
- pinch of sea salt

- Cos lettuce washed
- Assemble and season to taste
